Easy chocolate lava cakes

If you’re a bit of a chocoholic, do we ever have the recipe for you! These chocolate lava cakes are solid and cakey on the outside, with oozing warm chocolate “lava” on the inside. Absolutely decadent served with ice cream or cream – or both if you’re feeling indulgent! And the best thing is, they’re ridiculously easy!

Ingredients

  • 170g high quality semi-sweet chocolate
  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour 
  • 1/2 cup icing’ sugar
  • Pinch salt
  • 2 large eggs
  • 2 large egg yolks

Method

1. Preheat oven to 220C and spray 4 ramekins or 6 muffin cups with nonstick cooking spray.

2. Chop the chocolate roughly. In a medium heatproof bowl, combine butter and chopped chocolate and microwave on high in bursts of 10 seconds, stirring after each until combined and smooth. Set aside.

3. In a small bowl, mix together the flour, icing sugar, and salt. In another bowl whisk the eggs and egg yolks together until combined. Pour the flour mixture and eggs into the bowl of chocolate and stir everything together using a wooden spoon.

4. Spoon mixture evenly into each prepared ramekin or muffin cup.

5. Bake for 12-14 minutes until the sides are firm and the tops still soft. If baking in a muffin pan they will only take about 8-10 minutes.

6. Allow to cool for around a minute, then cover each with a plate and turn over (using a oven mitt because the ramekins will be hot).

7. Serve immediately with vanilla ice-cream or cream.
