If you want to try something new this summer this recipe is worth a go. Using seasonal avocado and a pasta of your choice this light dish can be on your table in just 20 minuets! The creaminess of the avocado is sure to make this dish a winner with your family.


  • 2 avocados, ripe
  • 1/2 cup basil, fresh leaves
  • 1 cup cherry tomatoes
  • 1/2 cup corn, canned kernels
  • 2 cloves garlic
  • 2 tbsp lemon juice, freshly squeezed
  • 12 oz spaghetti
  • Pinch of salt and freshly ground black pepper
  • 1/3 cup olive oil


  1. Bring to the boil a pot of water. Place pasta inside and follow packet instructions to cook pasta.
  2. Halve the cherry tomatoes and put aside for garnishing.
  3. Place avocado, basil leaves, lemon juice, olive oil and salt and pepper inside a food processor and combine ingredients till they are a smooth and creamy paste.
  4. Once pasta is cooked and strained mix the avocado paste through the pasta.
  5. Evenly distribute the corn and cherry tomatoes over the top of the pasta and serve while hot.

  1. Lovely. But use more than a pinch of salt. Latest research proves that unless you’re eating junk food, you can and should eat far more salt than previously thought. We need salt in our diets.

    • Helen Absolon Actually, I use iodised salt mostly since it contains iodine, and our soils are very short of it. Lack of which is a cause of hypothryoidism. I like Himalayan salt, but find it is not as strong as the ordinary kind.

  2. I was eating avocado pasta in 1958. We had trees in the back yard. Avacardo sangas for lunch.

    Nothing is new, if you have the fruit eat it.

    Oh yes we had all sorts of fruit trees so breakfast was the fruit which was in season. B|

    • I lived among the Avocado trees. Fruits never end all year round. Their abundance was staggering I had to feed them to the hogs. Made them healthy and shiny skin.

  3. I don’t eat pasta or wheat products at all but I would try using grated zucchini strips instead. They are a great way to eat span bol.

  4. Try instead of pasta spaghetti squash or zucchini noodles… Easy and healthy.. I cut spaghetti squash in half , spoon out seeds, piece a view holes with knife into skin and the place is baking dish with about 1/4 inch if water with some onion , cook for about half hour until soft inside, drag for to make noodles still in she’ll and add save of your liking….
