Easy Asian chicken patties

Whip up these simple patties for dinner.

Dinner doesn’t get much easier than this. These simple patties are made by throwing all the ingredients into one bowl, mixing, shaping and then frying up in the pan until they’re golden. Because of the Asian flavours in the mix, they’re great served with a simple salad of vermicelli noodles, cucumber, carrot, tomatoes and crushed peanuts. Squeeze some lime juice over the top before serving and dig in!

Ingredients

  • 500g chicken mince
  • 1 garlic clove, crushed
  • 1 tablespoon ginger, finely grated
  • 1 tablespoon lemongrass paste
  • 4 spring onions, thinly sliced
  • 1 tablespoon peanut oil

Method

1. Combine the chicken, garlic, ginger, lemongrass paste and half the spring onion in a large bowl. Season. Shape 1 tablespoon portions of mixture into patties.

2. Heat the oil in a large frying pan over medium-high heat. Cook the patties, in batches, for 3 mins each side or until browned and cooked through.
