Delicious passionfruit and apple tartlets

Major supermarkets and fresh produce markets always have royal gala or golden delicious apples for sale. They are versatile and work beautifully when coupled with the bold flavour of passion fruit. This take on apple tarts is both fresh and easy to make. It serves 6 and is a sure winner at your next dinner party!

Ingredients

  • 3 apples, preferably Gala or Golden Delicious
  • 400 grams rough puff pastry
  • All-purpose flour, for work surface 
  • 3 passionfruits
  • 170 grams of thick custard  
  • 1/3 cup superfine sugar 

Method

  1. Sprinkle flour lightly onto a work surface before rolling out the puff pastry to about 1.5mm thick. Using a 11cm round pastry or cookie cutter, cut out six rounds. Using a little cold water, brush the baking sheet before using a spatula to transfer each of the rounds. Place the baking sheet in the refrigerator and chill for 20 minutes.
  2. Preheat the oven to 200 degrees. Using a fork prick rounds into each round 5 times. Evenly divide  and spread the custard between each of the pastry rounds, leaving a narrow border around the edges.
  3. Remove the stem and core of the apples after peeling and slicing them in half. Thinly slice each half before arranging each sliced half on a pastry round in an overlapping circle. Transfer tray to oven and bake for approximately 15 minutes.
  4. Remove tray from oven and sprinkle each tartlet with sugar. Return tray to oven and continue baking 5 minutes more. Immediately transfer tartlets to a wire rack to cool off.
  5. Slice each passion fruit in half and scrape out the pulp and seeds and drizzle directly onto the tartlets just before serving.
