Delicious mince and sweet potato pie

Delicious, creamy sweet potatoes with savoury mice filling.

You can’t really go wrong with a shepherd’s pie, but it turns out you can make it even better than ever before. Taking a classic like shepherd’s pie and making it better with sweet potato, this lovely savoury mince and sweet potato pie is certain to be a winner for an easy dinner on a weeknight. 

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 500g lamb mince
  • 250g jar tomato chutney
  • 400g can finely chopped or diced tomatoes
  • 250ml (1 cup) chicken stock
  • 1kg sweet potato, peeled, chopped
  • 125ml (1/2 cup) milk
  • 30g butter
  • 120g (1 1/2 cups) coarsely grated tasty cheese
  • 150g (1 cup) frozen peas

Method

1. Preheat oven to 200C.

2. In a large frying pan, heat the oil over a high heat. Add mince and cook for 5 minutes, stirring to break up lumps, until mince changes colour. Add chutney, tomato and stock and bring to the boil. Season and reduce heat to simmer for 20 minutes. Lastly, stir in the peas.

3. While the meat sauce is cooking, steam the sweet potatoes until tender. Add milk and butter and use a potato masher or fork to mash.

4. Transfer the meat mixture to a large pie or casserole dish. Spread the mashed sweet potato over the top of the meat, and then sprinkle with cheese.

5. Bake for 20 minutes or until golden.
