Crispy parmesan-crusted potatoes

Crispy, cream potatoes: A perfect side or stand alone dish.

Everyone loves a roasted spud, and these flavourful parmesan-crusted ones are no exception! With few ingredients, they are really simple to make but these creamy, soft potatoes with a crispy, cheesy crust will be the star of the meal. They can be served with a fresh salad, with guacamole and sour cream, as a side dish to your Sunday roast dinner, or they have enough flavour to stand alone.

Ingredients

  • 5 medium red potatoes, peeled
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • Salt to taste
  • Chopped fresh parsley to garnish

Method

  1. Preheat oven to 220C.
  2. Cut the potatoes in half and then into approximately 1.5cm slices.
  3. Place the sliced potatoes into a medium sized mixing bowl and add the parmesan, paprika, garlic powder, olive oil, and salt. Mix well.
  4. Line a baking tray with baking paper and place the potatoes in a single layer.
  5. Bake for 25-30 minutes, then remove from oven, flip potatoes to the other side and bake for a further 10-15 minutes.
  6. Garnish with parsley to serve.
