Everyone loves a roasted spud, and these flavourful parmesan-crusted ones are no exception! With few ingredients, they are really simple to make but these creamy, soft potatoes with a crispy, cheesy crust will be the star of the meal. They can be served with a fresh salad, with guacamole and sour cream, as a side dish to your Sunday roast dinner, or they have enough flavour to stand alone.
Ingredients
- 5 medium red potatoes, peeled
- 1/2 cup grated parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 3 tablespoons olive oil
- Salt to taste
- Chopped fresh parsley to garnish
Method
- Preheat oven to 220C.
- Cut the potatoes in half and then into approximately 1.5cm slices.
- Place the sliced potatoes into a medium sized mixing bowl and add the parmesan, paprika, garlic powder, olive oil, and salt. Mix well.
- Line a baking tray with baking paper and place the potatoes in a single layer.
- Bake for 25-30 minutes, then remove from oven, flip potatoes to the other side and bake for a further 10-15 minutes.
- Garnish with parsley to serve.
