Coriander-lime coleslaw

Coleslaw is one of those sides that you can’t go wrong with for any lunch, barbecue, or bring-a-plate function. It’s an essential part of any barbecue, and this recipe provides a fresh twist on an old classic. 

Next time you have a barbecue or you’re asked to contribute a plate, this is the perfect one to share. The addition of the purple cabbage makes it look beautiful and vibrant, while the coriander and lime gives it a really fresh, crisp flavour. 

It would also go perfectly with pulled pork in a slider!

Ingredients

  • 8 cups green cabbage, thinly sliced and chopped
  • 4 cups purple cabbage, thinly sliced and chopped
  • 4 spring onions
  • 2 tablespoons lime zest
  • 2-3 tablespoons of lime juice
  • 1 cup fresh coriander, chopped
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sugar
  • Salt and freshly ground pepper, to taste

Method

1. In a large salad bowl, combine the red and green cabbage, spring onions, and coriander. Using a v-slicer may make the job of slicing the cabbage easier and quicker.

2. To make the dressing, combine the sour cream, mayonnaise, sugar, and lime zest. Add lime juice, and season well with salt and pepper. Mix well and pour over cabbage. Toss to combine.

3. Serve immediately, or it can be refrigerated ahead of time.
