Cola chicken stir fry

This easy to make 20 minute recipe has all your favourite Asian flavours but also a secret ingredient. Instead of using traditional Asian sweeteners, like brown sugar or palm, it uses cola! Give it a try and let us know what you think…

Ingredients

  • 1kg chicken breast, thinly sliced
  • 3 tbsp peanut oil
  • 850g frozen Chinese stir fry vegetables
  • 3 tbsp chilli and garlic stir fry paste
  • The juice of 1 lime
  • 3 tbsp soy sauce
  • 250ml cola
  • 60ml water
  • 2 tbsp cornflour

Method

  1. Prepare the ingredients
  2. Heat the peanut oil in a wok until it runs and brown the chicken in small batches. Place chicken to the side.
  3. Add chilli and garlic paste to the pan once its reheated, fry for 1 minute. Add frozen vegetables and stir to coat.
  4. Pour in cola, soy sauce and lime juice. Bring to the boil and simmer for 3-4 minutes or until the cola reduces by a third. Place the chicken back in the wok. Dissolve the cornflour in the water and pour over vegetables and chicken. Bring to the boil and allow it to simmer until the sauce is thickened. Remove from heat and serve with noodles or rice.
