Brazilian cheesy bread

Every bite of this amazing bread is full of cheesy goodness.

The real name for these little cheesy breads is pao de queijo, which literally means ‘cheese bread’ in Portuguese. While Brazil has given the world plenty of great things — Copacabana Beach, samba, and the magnificent Christ the Redeemer — these delicious little cheesy bites could be the best yet! They’re more like a puff than a bread, with a nice crust on the outside and a super light, airy and cheesy inside. Best of all they’re super easy to make and don’t require any of the tricky kneading or rising techniques you usually have to worry about with bread recipes. You can whip these up for when you’ve got people over this festive season, or just keep them stored them in your pantry for a delicious snack anytime you’re feeling peckish! Keep the recipe in your backlog and try it over the holidays! You won’t regret it!

Ingredients

    • 1/2 cup water
    • 1/2 cup milk
    • 1/4 cup oil
    • 1/2 teaspoon salt
    • 1 1/2 cups tapioca starch
    • 1 egg
    • 1 cup grated Parmesan cheese

Method

1. Preheat oven to 175C. Line a baking tray with baking paper. Bring water, milk, oil, and salt to boil in a large saucepan. Remove from heat; add tapioca starch and mix well. Let cool, 10 to 15 minutes.

2. Transfer tapioca mixture to a large bowl. Add egg and mix well to combine. Fold in Parmesan cheese and knead until dough is smooth but still sticky.

3. Scoop out 1 tablespoon of the dough and roll into a small ball; place on baking sheet. Repeat with remaining dough. Bake in the preheated oven until golden brown, about 20 minutes.
