Banana choc chip muffins

Banana cake will always be a classic, but these gorgeous little muffins are giving the ol’ cake a run it’s money! They’re super easy to make so you can easily whip up a batch in the morning before you get on with the rest of your day. The addition of chocolate chips brings that cheeky choc fix most of us are looking for come afternoon and it’s a great way a little bit of naughty with a little nice. The bananas are full of potassium and the whole recipe has a surprisingly low amount of sugar for a dessert (only 1/2 cup). Give them a go!

Ingredients

Dry Ingredients

  • 2 cups (250g) self raising flour
  • 1/2 cup (100g) caster sugar
  • 1 cup chocolate chips

Wet Ingredients

  • 100g butter, melted
  • 1 cup (250ml) milk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla essence
  • 3 over-ripe bananas

Method

1. Preheat oven to 220°C. Grease 12 cup muffin tray. Mix dry ingredients in a bowl. In a separate bowl, mix wet ingredients then add to the dry ingredients.

2. Bake 12-15 minutes. Remove from oven and leave to cool in tray for 10 minutes before removing.
