Zucchini slice is a humble little snack but so delicious! It is an excellent afternoon tea item, we love it!

Ingredients

  • 5 eggs
  • 1 cup self-raising flower
  • 375g grated zucchini
  • 1 onion finely chopped
  • 200g bacon diced
  • 1 cup grated cheddar cheese
  • 1/4 cup vegetable oil

Method

  1. Grease and line a 30 x 20cm tray and preheat oven to 170 degrees.
  2. In a large mixing bowl beat eggs. Add the flour and beat until smooth.
  3. Add zucchini, onion, bacon, cheese and oil, stir until combined.
  4. Pour into the prepared tray and bake in oven for 30 minutes.

  1. Love zucchini slice. Ideal to make when you grow your own and have a “oh no, not more zucchini” moment. Ideal hot or cold. Freezes and reheats well. Can also be made with seasoned chicken breast strips if you or your guests are not pork eaters.

  3. Forget afternoon tea …. We have that for dinner with salad or other veges quite often !!

  4. No need to grate zucchini. I just slice thinly. I also add a few chopped sun dried tomatoes which are marinated in olive oil and garlic. For an extra spicey flavour add half a chorizo chopped finely.

    • Just gives it a bit more zing. I served small slices at a wedding and got requests for the recipe. You can adjust the flavors as you prefer. More or less of the options.

    • Another variation is forget the Zucchini. Extra half cup of cheese no oil large tin pink or red salmon drained and bones removed. Add juice of lemon and either fresh or sqeezy tube basil to taste. Usually not as bulky so I cook in pie dish and is great served with green salad. The bacon adds the saltiness but you can omit and season instead. I usually add spring onions as well for color.

  5. Yes love this slice and made it a lot. Just wonder when did the word flour as in self-raising become the same as the flower we grow in the garden. Even recipes need to be spell checked.😀
