The best slow cooker chicken curry

This delicious dinner dish is absolutely exploding with flavour and will leave every single one of your guests asking you for the recipe! With a super simple ingredients list and just a few minutes to get it all organised – the rest can be left up to the trusty slow cooker.

This dish is perfect for those evenings when you are cooking for a crowd of hungry guests but also don’t want to be stuck in the kitchen all night. Whip it up in no time at all, then simply sit back and enjoy the addictive flavour. Yum!


  • 1 large onion, roughly chopped
  • 3 tbsp mild curry paste
  • 400g can chopped tomatoes
  • 2 tsp vegetable bouillon powder
  • 1 tbsp finely chopped ginger
  • 1 yellow capsicum, deseeded and chopped
  • 2 skinless chicken legs, fat removed
  • 30g pack fresh coriander, leaves chopped
  • cooked brown rice, to serve


  1. Put onion, curry paste, tomatoes, vegetable bouillon powder, ginger and capsicum into slow cooker pot with a third of a can of water and stir well. Add chicken legs and push under all the other ingredients so that they are completely submerged. Cover and chill in fridge overnight.
  2. Once chilled, cook on Low for 6 hrs until chicken and vegetables are really tender.
  3. Stir in the the coriander just before serving over brown rice.
