The best barbecue-glazed meatloaf

If you’re on the hunt for a tasty dinner meal that also makes for perfect freezable leftovers then the classic meatloaf is the ideal choice! And with just 20 minutes preparation time – there’s little to no effort that goes into achieving this mouthwatering flavour!

So not only are you signing up for a tasty weeknight meal but you also won’t have to deal with a massive clean up afterwards. Give this a go any night of the week and you’ll be in for a well-deserved treat. Enjoy!


  • 1kg beef mince
  • 1 medium brown onion, finely chopped
  • 1 1/2 cups fresh breadcrumbs
  • 1 egg, lightly beaten
  • 2 garlic cloves, crushed
  • 1 medium zucchini, grated
  • 1 small carrot, peeled, grated
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped fresh flat-leaf parsley leaves
  • 1/4 cup barbecue sauce
  • Steamed green beans, to serve
  • Gravy (optional), to serve


  1. Preheat oven to 180C/160C fan-forced. Grease a 6cm-deep, 11cm x 21cm loaf pan.
  2. Combine mince, onion, breadcrumbs, egg, garlic, zucchini, carrot, Worcestershire sauce, tomato paste and parsley in a large bowl. Season with salt and pepper. Press mixture into the prepared pan. Smooth surface.
  3. Bake for 1 hour to 1 hour 10 minutes, or until meatloaf is firm. Stand for 5 minutes. Drain away excess pan juices. Carefully turn meatloaf, top-side up, onto a baking tray lined with baking paper. Brush top and sides with barbecue sauce. Bake for 15 minutes or until sauce is caramelised. Stand for 5 minutes before slicing. Serve with beans and gravy (if using).
