Spicy cod and chorizo stew

This quick and easy fish dinner is perfect for those looking to whip up an impressive meal in just half an hour! With only seven ingredients, you just can’t go past this simplistic yet flavourful dish!

Don’t be afraid to add as much or as little chorizo as your tastebuds can handle and, if you’re really looking to set your mouth on fire, try popping some chilli flakes into the mix as well. Serve this up with a side of bread and enjoy!


  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 200g cooking chorizo, chopped into small pieces
  • 400g can chopped tomatoes
  • 4 cod fillets
  • 400g can butter beans, drained
  • 1/2 small pack parsley, roughly chopped


  1. Heat oil in deep frying pan. Add onion and cook over medium heat for 5 mins until starting to soften. Add chorizo and cook for another few mins to release oil. Coat onion in chorizo oil. Tip in tomatoes. Fill can with water and tip that in as well. Season and bring to the boil.
  2. Once boiling, season cod fillets and nestle into pan. Reduce heat and gently simmer for about 7 mins. Gently mix in butter beans and cook for 1-2 mins more until hot.
  3. Scatter with parsley and serve in bowls.
