This quick and easy ratatouille is a colourful, naturally gluten-free one-pot meal with a big, strong flavour that can be enjoyed for several meals, each better than the last. This shortcut version is excellent.
Serves 6-8
Ingredients
- 600ml (2fl oz) olive oil
- 2 medium-sized aubergines (eggplant)
- 4 red, orange and yellow peppers (bell peppers)
- 4 green and/or yellow courgette (zucchini)
- 4 large onions
- 1½ teaspoons (2 cloves) minced garlic up to 60ml (2fl oz) extra olive oil
- 2 x 400g (14oz) cans of whole tomatoes
- 2 teaspoons sugar
- 1 teaspoon salt
- 2 tablespoons basil pesto
- 2–3 tablespoons chopped fresh herbs
