Quick-and-easy apple cinnamon cobbler

I do love comfort food. With the whipping winds we’ve had recently, I’ve been cooking dishes that fill me up and make me feel warm on the inside. This quick-and-easy apple crumble recipe is one such dish. It’s like a warm blanket wrapped around you on a chilly winter’s night.

You’ll love the buttery cinnamon apples nestled under a soft, crumbly top, sprinkled with more cinnamon and some sugar. There’s definitely something about the smell of cinnamon as it’s cooking! Add some creamy vanilla ice-cream and you have the perfect dessert. Get in my belly!

Ingredients

THE FILLING

  • 3-5 medium baking apples (consider Granny Smith, Gala or Jonagold), peeled, cored and sliced into half centimetre pieces
  • 1/4 cup brown sugar
  • 2 tbsp raw sugar
  • 3 tbsp plain flour
  • 1 tbsp lemon juice (roughly 1 small lemon, juiced)
  • 1 tsp vanilla paste (or 2 tsp vanilla extract)
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Pinch of ground cardamom
  • Pinch of ground cloves

THE TOPPING

  • 1 cup plain flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup raw sugar
  • 3/4 cup milk
  • 6 tbsp unsalted butter, melted
  • 1 tsp vanilla paste (or 2 tsp vanilla extract)

Method

  1. Preheat oven to 180C. Grease a 23cm x 15cm baking dish (or similar), then set aside.
  2. To make the filling, add sliced apples, brown sugar, raw sugar, flour, lemon juice, vanilla and spices in a large bowl. Mix together until combined.
  3. Add filling to prepared baking dish.
  4. Make topping by whisking flour, baking powder, salt and sugar in a medium bowl. Add milk, butter and vanilla, mixing until combined.
  5. Pour topping on filling. Transfer to oven and bake for 40-45 minutes or until the filling is bubbling and the top is golden brown.
  6. Remove from oven and serve with vanilla ice-cream or custard.
