Super easy no-bake peanut butter squares

Peanut butter lovers rejoice — this tasty treat is just for you! Not only are these peanut butter squares no-bake, they are low in sugar too!

I love the mixture of peanut butter, chocolate, salt, vanilla and maple syrup that goes into this snack. The recipe is really easy, and it’s also great if you are gluten intolerant, vegetarian or vegan.

You can store these beauties in an airtight container in the fridge for up to two weeks, or you can wrap them in baking paper and keep in an airtight container in the freezer for up to three months.

Makes 18 pieces

Ingredients

THE DOUGH

  • 1 cup natural peanut butter, crunchy or creamy
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 1/4 cup almond flour
  • 1/4 cup chocolate chips, plus more for sprinkling
  • 1/4 tsp sea salt

THE TOPPING

  • 120g bitter chocolate (70% chocolate)
  • 2 tbsp natural peanut butter (creamy works best here)
  • 1/2 tsp flaky sea salt (optional, to serve)

Method

  1. Line a 23cm x  13cm loaf pan with parchment paper and grease the paper lightly with coconut oil. Set aside.
  2. For the dough, in a medium bowl, mix peanut butter, maple syrup and vanilla until smooth. Stir in almond flour, chocolate chips and sea salt and mix until ingredients come together. Using your hands, press the dough into the prepared pan in an even layer.
  3. For the chocolate topping, microwave chocolate and peanut butter for 30 seconds. Stir. Microwave again for 30 seconds and stir until the chocolate is completely melted. It should look soft, smooth and shiny. Melt for a few more seconds in the microwave, if needed.
  4. Pour and spread chocolate topping over the dough in an even layer. Sprinkle with extra mini chocolate chips, if desired.
  5. Rest in the refrigerator for at least two hours, or until firm. Slice into 18 pieces, or as desired. Sprinkle with flaky sea salt, if desired.
