Kale, pomegranate, and mandarin orange salad

We can never turn down a really good salad, particularly one that is jam-packed with seasonal fruits and veggies, like this kale, pomegranate and mandarin salad.

This salad is a dish that’s so flavourful and festive, you’ll be heading back to second helpings!

Now, if you aren’t a massive fan of kale leaves, we have two things to say to you. First, consider giving it another shot! Try soaking kale leaves and giving them a massage, we promise it makes the world a difference to the texture. Secondly, if kale is something you really don’t enjoy, feel free to substitute it with either spinach, rocket or even mixed greens. Any of those will work exceptionally well with the rest of these ingredients.

Serves – 8



  • 5 cups chopped kale leaves (about 3-4 large leaves, stems removed)
  • 2 peeled and separated mandarin oranges
  • 3/4 cup pomegranate arils
  • 1/4 cup chopped walnuts
  • optional: 30ml goat cheese


  • 2 tbsps balsamic vinegar
  • 2 tbsps extra virgin olive oil
  • ½ tbsp honey
  • 1/8 tsp salt
  • 1/8 tsp ground pepper


  1. Place the kale in a colander and massage in warm running water until tender, about 2 minutes. Drain well and transfer to a serving bowl.
  2. To the serving bowl, add the mandarin orange segments, pomegranate arils, walnuts (and goats cheese).
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, honey salt and pepper
  4. Toss all together and voila, ready to serve.
