Quick and easy teriyaki salmon

This delicious meal with have everyone asking you for the recipe!

Trying different flavours in the kitchen is always a fun experience and this teriyaki salmon is a great recipe for those wanting to branch out a little. Teriyaki is a classic Japanese sauce that goes wonderfully with all kinds of meat, but especially chicken and salmon.

This recipe is incredibly simple but the flavour you get from the different sauces and ingredients is completely mouthwatering and delicious. Serve the salmon with a side of steamed greens and rice for a wholesome meal you’ll come back to time and time again.

Ingredients

  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) soy sauce
  • 60ml (1/4 cup) mirin seasoning
  • 4 (about 250g each) skinless salmon fillets, halved lengthways
  • Peanut oil, to grease
  • 2 shallots, sliced
  • Steamed rice, to serve

Method

  1. Combine sugar, soy sauce and mirin seasoning in large glass bowl. Stir until sugar dissolves completely. Add salmon. Turn to coat. Cover bowl with plastic wrap and chill in fridge for at least 30 minutes to marinate.
  2. Preheat grill on high. Line baking tray with aluminium foil. Lightly brush lined tray with peanut oil to grease. Drain salmon and reserve marinade. Place salmon on prepared baking tray. Cook under grill and brush the salmon occasionally with remaining marinade for 5 minutes or until the salmon is golden and just cooked through.
  3. Divide rice between serving plates. Sit salmon on top of rice. Sprinkle shallots over top. Serve.
