This is easily the most moist banana loaf I have ever cooked. In fact, I ditched my previous go-to banana loaf recipe for this one a couple of years ago and I haven’t looked back.

Because my house is often the place where good bananas come to retire, I find myself making at least two banana loaves at a time. My neighbours love me!

Over the years I’ve tweaked things a bit, so if you don’t want to use as much butter or sugar as listed in the ingredients, have a play until you get the perfect mix. I can confirm that with half the amount of sugar and a bit less butter the loaf remains utterly delicious.

This is a fantastic loaf to make if you have little people in your life. It’s a wonderful way to avoid the cries of “Can I have some TV?”

Serves 12.

Ingredients

  • 125g butter
  • 3/4 cup caster sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 2 bananas mashed ripe
  • 1 1/2 cups self-raising flour
  • 1/4 cup milk

Method

  1. Preheat oven to 170C.
  2. Melt butter, sugar and vanilla in a medium-sized saucepan over medium-high heat. Remove from heat once melted.
  3. Add mashed bananas and stir through until just combined.
  4. Add egg and mix well. Stir in flour, then pour in milk and fold together gently.
  5. Transfer to a 24cm loaf tine and bake for approximately 40 minutes.
