Curry-flavoured roast potatoes with a spicy tomato sauce

From time to time we like a bit of curry in the house and the easiest Indian-inspired side dish I could ever make are these delicious curry-flavoured roast potatoes. My husband loves the spicy tomato sauce for an extra kick. The secret, of course, is in the spices. This is the perfect partner if you’re looking to spice up your Sunday roast.

You could par boil your potatoes prior to baking them, but there’s no need. The baking is also a much better option than frying.

Serves 6


  • 750g potatoes, roughly chopped
  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves, crushed
  • 3 tsp mild curry powder
  • 1/2 tsp cracked black pepper


  • 2/3 cup tomato sauce
  • 2 tsp hot chilli sauce
  • 1/4 tsp garam masala
  • Pinch cayenne pepper, to taste


  1. Preheat oven to 220C/200C fan-forced. Line a large baking tray with baking paper. Place potato on prepared tray.
  2. Combine oil, garlic, curry powder and cracked pepper in a small bowl. Drizzle over potato. Toss to coat. Season with salt. Bake for 45 minutes or until potato is golden and crisp.
  3. Combine sauces, garam masala and cayenne pepper in a small bowl. Mix.
  4. Serve potato with sauce mixture.
