Crispy, delicious ginger biscuits

There is something really special about ginger Biscuits. The sweet biscuits combined with the gentle spice of ginger is incredibly comforting, absolutely delicious, and the smell and taste bring back so many fond memories. This is my favourite version you can choose to rub in the butter or melt in with the mixture. Also for a sweet tooth, you can choose to roll the biscuit balls in raw sugar first for a crispy sweet sugar coating before you cook them. Enjoy!

Serves 32 biscuits.

Ingredients:

  • 115g Flour
  • 1 tsp  Ground Ginger
  • 1 tsp Bi-carb Soda
  • 50g Sugar
  • 60g Butter
  • 60g Golden Syrup

 

Method:

  1. Preheat over to 150C
  2. Sift flour, ginger, and bi-carb and rub in butter
  3. Add sugar, and syrup and stir thoroughly with a wooden spoon
  4. Roll the mixture into small balls

Or

  1. Sift flour, ginger, and bi-carb
  2. Gently melt butter, syrup. sugar and cool
  3. Add liquid to dry ingredients stirring with a wooden spoon
  4. Divide mix into 4, 4 again = 16
  5. Divide mix into 4, 4, 4 again = 32
  6. Roll into balls (as an option for the sweet tooth you can roll these balls into raw sugar before baking) press lightly onto parchment-covered baking sheet. They do spread a little so make sure to leave about 5cm around them.
  7. Bake for 10-15 minutes in the oven.
  8. Take out and let cool, then transfer to a rack to crisp up before storing in a container
