Classic slow cooker Thai ginger and peanut butter curry

This dish has long been a favourite here at Starts at 60, all thanks to the mouthwatering flavour of the dish and not to mention how incredibly simple it is to whip up! Using simply a handful of ingredients and requiring just ten minutes of preparation time, you won’t believe just how easy it is to achieve this show-stopping flavour!

If the level of spice isn’t enough for your tastebuds and you’re looking to spice it up, even more, try adding in chilli flakes or fresh chilli peppers, depending on how explosive you want the flavour to be. Yum!

Ingredients

  • 1kg or about 8 chicken thighs, chopped into large chunks
  • 1 jar of salsa
  • 1/4 cup of peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoons soy sauce
  • 1 tablespoon crushed ginger

Garnish

  • 1/2 bunch coriander, chopped
  • 1/4 cup of peanuts, crushed up into small chunks

Method

  1. Add chicken chunks into slow cooker bowl
  2. Then add salsa, peanut butter, lime juice, soy and ginger.
  3. Cook on high for 3-4 hours or until chicken is cooked.
  4. Serve on a bed of rice.
  5. Garnish with a large handful of chopped coriander and a handful of crushed unsalted peanuts.
