ABOUT 78˚ NATIVE GRAIN WHISKEY
Creating Whiskey that now truly reflects Australia’s present and past, the Native Grain Whiskey releases are the result of years of experimenting with introducing Australian Native Produce into the mash. To date we have experimented with Wattleseed, Kangaroo Grass, Spinifex and Salt Bush Seed to name a few. The results are astounding and you can really taste the land from where it comes.
Now we implore you to try a true Australian Whiskey. Not only for its recognised quality, but because it champions our country, not just for the present but also the past.
Intense cereal characteristics & apricot kernel from the Weeping Grass mingle with caramel, toffee & toasted malt from the traditional grain.
Rich and creamy with beautifully balanced french oak influence. Fresh red berry character. Apricot kernel, stonefruitand spice give way to earthy almost ginger character.
Beautiful long finish, including notes of dried apricots and kitchen spice.
Weeping Grass grows native to Australia and produces a plump grain similar to a rice grain, but when distilled it gives beautiful cereal, brown rice-like characters, with hints of apricot kernel & toasted chocolate. We like to think of it as Australia’s Rye.
Giving off notes of creamy caramel, toasted cereal & lingering hints of citrus & toffee. We know South Australia has prized barley that is GM free and 100% rainwater fed. Currently around 85% of South Australian barley is exported, but we couldn’t be happier by supporting our local growers by using home grown barley.
Rested in 120 litre French Oak barrels, we work closely with a local cooperage that operates in South Australia to have our barrels coopered to our specifications as the quality of oak is crucial to our Whiskey releases.

The beautifully balanced french oak influence gives way to notes of fresh red berries, stonefruit & earthy, spicy ginger characters for a lingering finish.
