Slow cooker BBQ pulled pork

Pulled meat is having a moment, but make no mistake; it’s no passing fad. This is the ultimate versatile meat. Cook up a big batch of pulled pork (or it could easily translate to any other type of meat if you’d prefer it over pork) on the weekend, and you’ve got several potential meals for the week. From pulled pork nachos, tacos, sliders (with coleslaw is amazing), to a wonderful change as a sandwich meat for lunches, this one will have you set.

The best part is that you can set it cooking in the morning or the night before and forget about it! 

Ingredients

1 large onion, diced
2.5kg pork shoulder chuck roast
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 cup chicken stock
1 cup BBQ sauce
2 tablespoons Worcestershire sauce
3 large garlic cloves, crushed
2 tablespoons brown sugar

Method

  1. Place onion in the bottom of the slow cooker.
  2. Combine the paprika, salt, and pepper and massage into the pork shoulder. Place the meat over the onions.
  3. Combine the chicken stock, BBQ sauce, Worcestershire sauce, brown sugar, and garlic for the marinade and pour over the pork.
  4. Set on low heat and cook, covered, for eight hours.
  5. Shred the pork with forks, and serve with more BBQ sauce.
