Perfect crepes recipe

Crepes are one of the most versatile foods you could possibly make. They can be breakfast, morning tea, brunch, lunch, snack, dinner, or dessert.

The choices for toppings to serve crepes with are endless. You can choose sweet toppings like sugar, chocolate spread, berries, whipped cream, or custard, or savoury toppings to make a meal out of them like cheese, mushrooms, grilled vegetables or meat.

With only a minor tweak, this recipe can be either sweet or savoury. Which will you choose?

Ingredients

  • 3 eggs
  • 1⅓ cup milk
  • 1 cup flour
  • ¼ teaspoon salt
  • 3 tablespoon melted butter, cooled
  • 1 tablespoon vanilla
  • 1 tablespoon sugar

Method

1. Combine eggs, milk, flour, salt and slightly cooled melted butter in a large mixing bowl. If you want a sweet crepe add the sugar and vanilla, otherwise leave it out.

2. Whisk mixture well.

3. Heat a 20cm frypan to medium, and grease lightly with butter.

4. Pour ½ cup of crepe batter into the pan and tilt so the batter covers the pan in a thin layer. Cook until the edges start to lightly brown and then flip and cook for a few more seconds.

5. Serve with your topping of choice.
