Christmas desserts are often too rich, or too heavy on the alcohol, for young children to enjoy, but that’s where this delicious slices comes in. If the grandkids aren’t too keen on digging into a slice of a traditional pudding or trifle, this chewy and sweet slice is the answer. You can make it with dried fruit, or use fresh cherries, like here, for something a little more special. The almonds bring the perfect amount of crunch and the whole thing is so delightful the little ones will be lining up for more!
1 cup powdered milk
1 cup rice bubbles
1 cup icing sugar
1/2 cup desiccated coconut
3/4 cup almonds
1 cup fresh cherries, or mixed dried fruit
250g copha, melted and cooled off
2 teaspoons vanilla essence
1. Mix all the dry ingredients together, then add the melted copha and vanilla and mix in.

2. Pour into a slice tin or baking tray lined with baking paper and press the mixture evenly into the tray.
3. Chill in the refrigerator till set and firm, about 2 hours. Cut into squares to serve.
