This might look like a regular cake with cream cheese icing, but this recipe is definitely something different. The dense perfectly moist base is made with a unique mixture of sweet potato, date and mixed spice to make one of the most flavoursome cakes you’ll ever try. The icing then also steps out of the box with its zesty orange-infused cream cheese topping. These exciting tastes are definitely going to impress your guests and will no doubt have you going back for seconds!
Ingredients
- 2 1/2 cups (400g) wholemeal self-raising flour
- 1 cup (220g) brown sugar
- 1 teaspoon mixed spice
- 1/2 teaspoon bicarbonate of soda
- 3 cups grated gold sweet potato
- 16 fresh dates, seeded, chopped (about 1/2 cup chopped dates)
- 1 cup (250ml) vegetable oil
- 3 eggs
- 2 teaspoon finely grated orange rind
- 125g cream cheese
- 50g butter, softened
- 1/2 cup (80g) icing sugar mixture
Method
- Preheat oven to 180C. Grease and line a 20cm round cake pan. Add flour, sugar, mixed spice, bicarbonate of soda, sweet potato and dates in a large bowl. Stir to combine. Make a well in the centre. Combine oil, eggs and orange rind in separate bowl. Pour wet ingredients into dry ingredients. Stir well until combined. Pour mixture into pan.
- Bake for 1 hour or until cooked through completely. Set aside to cool in pan for 5 minutes. Turn out onto wire rack to cool completely.
- Add cream cheese, butter and icing sugar to bowl. Use electric mixer to beat until light and fluffy. Spread over top of cake. Slice and serve.
