Super-simple passionfruit vanilla slice

The perfect, refreshing slice to have with your afternoon tea cuppa!

This slice seriously cuts down on time in the kitchen, leaving you more time to spend with any lucky guests who’ll be joining you in eating it.

The deliciously wobbly and smooth custard is perfectly placed on top of the crunchy lattice biscuit base. Once these treats are made up, you simply leave it to cool in the fridge. Slice it into squares and enjoy it with a well-deserved cuppa!

Ingredients

  • 1 packet of Lattice biscuits
  • 600ml double cream
  • 100g packet vanilla pudding mix
    Passionfruit Icing
  • 1 cup icing sugar
  • 1 tbsp passionfruit pulp
  • 1 tbsp butter, softened

Method

  1. Line a rectangular baking dish with paper and place a layer of biscuits onto the dish. In a bowl, combine cream and pudding, mix until it becomes thick.
  2. Pour mixture onto the biscuit base and add another layer of biscuits on top. Refrigerate for at least 30 minutes before slicing and serving.
  3. Combine icing sugar, passionfruit pulp and butter in a bowl until it reaches a spreadable consistency. Spread over the top of the slice, then cut into squares and serve.
