Super simple date and oat biscuits

A super easy and healthy snack that everyone will love.

Dried and pitted dates are a fantastic sweet substitute for a healthier homemade biscuit option. These incredibly simple treats are great to make up as a healthy, on-the-go snack to enjoy throughout the week and with under half-an-hour prep time, this recipe makes around 40 delicious bite-sized biscuits to keep you stocked for the coming days. They are perfect to either whip up before a get together for guests to devour warm and fresh from the oven or to be frozen in airtight containers for up to three months for you to slowly enjoy as a cheap, healthy snack between big meals. Feel free to add extra nuts or dried fruits to the mix to enhance the flavours even more. Enjoy!

Ingredients

  • 3/4 cup (105g) dried pitted dates, coarsely chopped
  • 1/4 teaspoon bicarbonate of soda
  • 2 1/2 tablespoons boiling water
  • 150g butter
  • 1/2 cup (110g) caster sugar
  • 1/2 cup (110g) brown sugar
  • 1 egg
  • 1 cup (150g) plain flour
  • 1 teaspoon ground cinnamon
  • 3 1/3 cups (300g) rolled oats

Method

  1. Preheat oven to 180C. Line 2 large baking trays with baking paper. Add dates, bicarbonate of soda and boiling water to a medium heatproof bowl. Set aside to soak for 10 mins.
  2. Meanwhile, beat butter and combined sugar with an electric mixer in a large bowl until pale and creamy. Add egg and beat until just combined.
  3. Add in flour, cinnamon, oats and date mixture. Stir to combine. Spoon tablespoonfuls of mixture and press together with fingers. Place on prepared trays, about 3cm apart. Bake for 12 mins or until golden. Set aside on trays to cool. Serve.
