Super-easy French cherry clafoutis

A great dessert treat for guests!

This traditional French delicacy tastes just like if you were to order it in Paris! Not only is it super light and just the right amount of sweet for your tastebuds, but it also surprisingly easy to make. Despite looking and tasting delicate and delicious, the recipe really just involves tossing everything into one bowl and mixing together.

And don’t worry if you aren’t a fan of cherries because you can replace them with anything that would suit your tastebuds a bit better. Top it off with a scoop of vanilla ice cream and you have a super easy and delicious gourmet dessert.

Ingredients

  • 4 large eggs
  • ½ cup sugar
  • ½ teaspoon salt
  • 1 cup milk
  • Zest one lemon
  • 1 tbsp vanilla extract
  • ¾ cups plain flour
  • 2 tbsp melted butter
  • 2 cups black cherries, pitted and halved
  • Icing sugar for dusting

Method

  1. Preheat oven to 180C. Grease and lightly flour a 23cm round cake dish. In a large bowl, add eggs, sugar, salt, milk, lemon zest and vanilla extract. Beat with a hand held mixer until just combined. Add flour. Beat to combine until smooth. Add melted butter and beat to combine into the batter.
  2. Pour mixture into prepared dish. Add cherries onto top of cake in your preferred patterns. Bake for 45 – 50 minutes or until skewer is inserted and comes out clean. Remove from oven and leave to cool slightly. 
  3. Dust with icing sugar. Cut into even slices. Serve.
