Simple no-bake chocolate and walnut slice

The best dessert treat!

This one’s a must for slice fanatics – the coffee biscuits in the base gives the slice a nice crumbly bottom, before it’s topped with good, old-fashioned cocoa powder, golden syrup and desiccated coconut, then the top is covered in delicious, smooth chocolate. This recipe calls for dark chocolate, but if you prefer the milk variety, it’s fine to swap it.

If you’re feeling fancy, decorate the top of each square with a walnut. If you can wait that long to tuck in!

Ingredients

  • 250g milk coffee biscuits, crushed
  • 1/2 cup (45g) desiccated coconut
  • 1 cup walnuts
  • 1 tablespoon cocoa powder
  • 2 tablespoons golden syrup
  • 240g dark chocolate, plus extra melted chocolate to drizzle
  • 125g unsalted butter
  • 1 egg

Method

  1. Line a 20cm x 30cm lamington pan with baking paper. Mix the biscuits, coconut, nuts and cocoa in a food processor until they are coarse crumbs. Transfer to a bowl.
  2. Melt golden syrup, 120g chocolate and 2 tablespoons butter in a pan over low heat. Add to crumb mixture with egg, mix well, then press into pan. Chill until set.
  3. Melt remaining chocolate and butter in a small pan over low heat until smooth, then pour over slice. Score top with knife to form 24 squares. Chill until set.
  4. Slice and serve drizzled with extra chocolate if desired.
