If you’re adventurous with your tastebuds and feel like making a dessert that is a bit out of the box, then give these deliciously unique teacakes a go. Not only are they super easy to make but the flavour is unlike any other. It will be something a bit different that you definitely won’t regret trying. They taste absolutely perfect when eaten with a dollop of cream and a hot cuppa and make a wonderful after-dinner treat. Make these in bulk and freeze them in airtight containers for up to 2 months or bake them as you go and enjoy them fresh from the oven!
Ingredients
- 3 eggs
- 3/4 cup (165g) caster sugar
- 1 tablespoon finely grated orange rind
- 1 1/4 cups (185g) self-raising flour
- 1/4 cup (30g) almond meal
- 1/2 cup (125ml) olive oil
- 1/4 cup (60ml) milk
- 1 1/2 tablespoons caster sugar, extra
- 1 teaspoon finely grated orange rind, extra
- Orange zest, to serve
Method
- Add eggs, sugar and orange rind to a bowl. Use electric mixer to beat together until light and fluffy. Fold in flour, almond meal, oil and milk. Cover with plastic wrap. Place in refrigerator to chill for 2 hours.
- Preheat oven to 200C. Grease a 12 hole muffin pan. Spoon even amounts of batter into pan. Add extra sugar and extra orange rind to a bowl. Stir. Sprinkle over batter.
- Bake for 15 to 20 minutes or until golden. Set aside to cool in pan for 5 minutes. Turn out onto wire rack to cool completely. Sprinkle with orange zest. Serve.
