Healthier chocolate and raspberry muffins

The tastiest dessert treat that isn't bad for you!

These muffins are super decadent, moist and sweet but they are also gluten-free and a have far less calories than your normal chocolate muffins. These sweet treats substitute all of the super unhealthy ingredients that you would usually find in chocolate desserts with slightly healthier but none-the-less delicious options. With dark chocolate, almond meal and coconut sugar you can be sure that you are heading down the healthier route without skimping on taste!


  • 60g butter, chopped
  • 100g 70% dark chocolate, finely chopped
  • 80g (2/3 cup) almond meal
  • 45g (1/4 cup) coconut sugar
  • 2 eggs, lightly whisked
  • 2 teaspoons vanilla extract
  • 125g punnet raspberries


  1. Preheat oven to 180C. Line 9 holes of 1/3 cup muffin pan with paper cases. 
  2. In a medium microwave safe bowl, add butter and half the chocolate. Microwave on high (100%) for 1 minute or until the mixture is completely melted and smooth.
  3. In a separate large bowl, add almond meal, sugar and remaining chocolate. Make a well in the centre of the mixture. Add egg, vanilla and melted chocolate mixture. Stir well to combine. Spoon mixture into prepared cases. Smooth over the top. Press raspberries into each muffin. Bake for 15 minutes until cooked through. Serve warm or cool.
