If you are struggling to find a simple and easy dessert to serve at special events that will be a hit with the guests, then this recipe is what you are looking for. The apple and rhubarb crumble is best served warm with a generous scoop of ice cream to add some extra sweetness to the dessert.
It is definitely a crowd pleaser as the flavours of rhubarb and apple are absolutely delicious together. This quick and easy recipe won’t take much effort but it will produce a mouth-watering dessert!
Ingredients

5 (750g) apples, peeled, cored, chopped

1/3 cup caster sugar

1/2 teaspoon ground cinnamon

1 teaspoon finely grated lemon rind

6 rhubarb stems, trimmed, cut into 3cm pieces

2 teaspoons plain flour

1 cup rolled oats

1/2 cup plain flour, extra

1/2 cup firmly packed brown sugar

80g butter, chilled, chopped

1/4 cup flaked almonds

Icing sugar, to serve

Method
- Preheat oven to 180C or 160C fan forced. In a large saucepan over medium heat, add apple, caster sugar, cinnamon, lemon rind and 2 tablespoons of water. Cover and cook for 5 mins until apple starts to soften. Mix in rhubarb and flour. Cover again and cook for 3 mins until rhubarb softens.
- Transfer mixture to an 8-cup capacity baking dish.
- In a bowl mix together oats, extra flour and brown sugar. Rub butter into mixture with fingertips until it looks like breadcrumbs. Add almonds and stir.
- Sprinkle oats mixture over rhubarb mixture. Place in oven and bake until golden for 35 mins. Set aside to cool for 5 mins.
