There's nothing better than a homemade loaf for afternoon tea!

Fruit loaves, banana bread and carrot cakes have always been crowd pleasers but now you can add another delicious loaf flavour to the list. This amazing pumpkin bread is something a bit different to enjoy for morning or afternoon tea. If you celebrate Halloween, this recipe is perfect for getting you and the grandkids into the spooky season and if you don’t, then simply use it as an excuse to bake this delicious dish. Top it off with some butter or spread of your choice and enjoy this dense and delicious sweet loaf!

Ingredients

  • 650g butternut pumpkin, peeled, deseeded
  • 100g butter, softened
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 cups self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Method

  1. Preheat oven to 180°C. Grease base and sides of a 6cm deep, 10.5cm x 20.5cm (base) loaf pan. Line with baking paper and leave overhang.
  2. Wash and dice pumpkin into 4cm pieces. Without drying, place pumpkin in a single layer on a microwave-safe plate. Cover with plastic wrap. Microwave on high for 3 to 4 minutes or until pumpkin has softened. Set aside to cool. Drain. Place cooled pumpkin in a food processor. Process until smooth.
  3. Use an electric mixer to cream butter and sugar until pale and fluffy. Add eggs. Beat until well combined. Stir in pumpkin puree.
  4. Sift flour, bicarbonate of soda, cinnamon, nutmeg, ginger and cloves over pumpkin mixture. Stir gently to combine. Spoon into prepared pan. Smooth surface with back of spoon. Bake for 50 to 55 minutes. Stand in pan for 10 minutes to cool. Transfer to wire rack. Serve.
