Decadent dark chocolate and cranberry brownies

These deliciously dense brownies are ideal for anyone looking for a chocolatey snack with a fruity twist to enjoy for their afternoon tea bite. It’s also the absolute best for any cooks who don’t feel like being tied down in the kitchen all afternoon as they can easily by made up in under an hour. While these fudge brownies will definitely satisfy your sweet tooth, they’re also the perfect amount of sweet with the addition of the cranberries. And if you’re looking to add a bit more excitement into the mix, try adding in raspberries or even pomegranates for some taste variation. Enjoy!

Ingredients

  • 175g butter, cubed
  • 200g dark chocolate, coarsely chopped
  • 1 1/4 cups plain flour
  • 1/2 teaspoon baking powder
  • 1/3 cup cocoa
  • 4 eggs, lightly beaten
  • 1/2 cup dried cranberries
  • 3/4 cup brown sugar

Method

  1. Preheat oven to 170°C. Lightly grease and line a square 20cm cake pan with baking paper.
  2. Add butter and chocolate to a heatproof bowl sitting over a saucepan of boiling water (make sure the bowl isn’t touching water). Stir mixture occasionally until it is melted and smooth. Remove bowl from heat. Set aside.
  3. Sift flour, baking powder and cocoa into a large bowl. Add chocolate mixture to flour mixture. Add in eggs, cranberries and brown sugar. Stir mixture with a large spoon until well combined. Pour into cake pan. Cook for 35 minutes or until set but inside is slightly sticky. Set aside to cool in pan for 10 minutes before transferring to a wire rack. Slice and serve.
