Decadent chocolate coconut cake

A delicious dessert treat that everyone will love!

This dense and rich chocolate cake with a hint of coconut is an absolute dream for anyone with a sweet tooth. The layer of chocolate buttercream stuffed in the middle of the moist cake really tops off the entire dish. The same creamy icing is then thickly layered all over the top and sides to tempt absolutely anyone and everyone.

Ingredients

  • 125g butter, softened
  • 1 cup caster sugar
  • 1/2 teaspoon coconut essence
  • 2 eggs
  • 1 1/2 cups self-raising flour
  • 1/4 cup cocoa powder
  • 1/2 cup desiccated coconut
  • 1 cup milk
  • double cream, to serve
    Buttercream
  • 200g butter, chopped
  • 200g dark chocolate, chopped

Method

  1. Preheat oven to 180C. Grease and line a 20cm round cake pan with baking paper. Add butter, sugar and coconut essence into a bowl. Beat with electric mixer until light and fluffy. Add in eggs one at a time. Beat mixture well after each egg.
  2. Sift half the flour and half the cocoa over the top of the butter mixture. Add half of the coconut. Stir well to combine. Add half of the milk and stir. Repeat with the remaining halves of the flour, cocoa, coconut and milk. Pour mixture into cake tin. Smooth top with back of spoon. Bake for 55-60 minutes until an inserted skewer comes out clean. Leave to cool in pan for 10 minutes. Turn out onto wire rack to cool completely.
  3. Meanwhile, add butter and chocolate in a heatproof glass bowl. Place bowl over saucepan of simmering water. Stir together until completely smooth. Leave to cool to room temperature. Beat mixture together with a wooden spoon until thick. 
  4. Cut cooled cake in half crossways. Spread one-third of buttercream over the base. Top with the remaining half of cake back on top. Spread remaining buttercream generously over top and sides. Cut into even slices. Serve.
