Sweet almond croissant

Digging into a warm and sweet croissant in the morning is the best way to start the day, and this homemade treat is truly mouth-watering.

While the recipe tastes gourmet, it is a bit of a cheat for baking beginners. Rather than making the croissants from scratch, this one simply lets you buy some ready made pastries – after all, the paste is the real winner!

The creamy almond filling will no doubt leave everyone’s mouths watering and have you wanting to make these every chance you get!

Ingredients

  • 150g butter, softened
  • 1/2 cup (75g) icing sugar, sifted, plus extra to dust
  • 4 tablespoons (1/3 cup) flour
  • 2 cups almond meal
  • 1 teaspoon almond essence
  • 6 ready-made plain croissants
  • 1/3 cup almonds (skin on), sliced

Method

  1. Preheat the oven to 170°C.
  2. Add butter, sugar, flour, almond meal and essence to a food processor. Pulse to combine together.
  3. Cut croissants in half lengthways. Place bases on a baking tray. Spoon even amounts of almond paste onto each base and spread. Reserve 1/4 of the mixture. Place croissant tops back on, spread with left over paste, scatter almonds generously over top. Bake for 10 minutes. Remove from oven. Dust with icing sugar. Serve.
