Chewy flourless chocolate biscuits

A perfectly delicious sweet treat!

Apparently you don’t need flour or butter to make deliciously chewy, rich chocolate biscuits that will be an absolute hit with the crowd. With just five ingredients and a pinch of salt and you can whip these biscuits up in no time at all. They don’t contain any flour or butter but they still have that incredibly sweet taste that everyone will love, including the grand kids. If you want the recipe to be completely gluten-free just double check which brand of cocoa and chocolate chips you use. These delicious treats taste just like a thinner version of a chunky, chocolate brownie so dig in and enjoy!

Ingredients

  • 1 1/2 cup (180 grams) icing sugar
  • 1/3 cup (35 grams) unsweetened cocoa powder
  • a pinch of salt
  • 1 or 2 large egg whites at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (90 grams) semi-sweet chocolate chips

Method

  1. Preheat oven to 180C. Line baking tray with baking paper. Add icing sugar, cocoa powder and salt to a large bowl. Whisk together to combine. Add vanilla extract and one egg white. Whisk until batter is thick but moist. If it seems too thick, add another egg white. Fold in chocolate chips.
  2. Spoon tablespoons of batter onto prepared baking sheet with enough space between each biscuit so they can spread. Bake for 12-14 minutes, until tops are glossy and begin to crack.
  3. Leave biscuits to cool completely on tray before carefully removing them with a spatula. Serve.
