Super-easy honey and vanilla muffins

Perfect for afternoon snacks.

These muffins are a cinch to make as a treat for the grandkids or for an afternoon bite with a cup of tea or coffee. They are the perfect size for a sweet snack and the unique addition of honey in the cream cheese icing adds a new flavour that the grandkids will know as your special twist.

The thickness of the cream cheese icing also makes it really easy to decorate the muffins with fun designs which is an activity that your grandkids would love! These can also be made in bulk, so if you have a birthday coming up or if you’re in charge of dessert for the next gathering than bake a two or three batches of these muffins and let the guests go crazy over them.

Ingredients

  • 2 eggs
  • 135g (4 1/2 tablespoons) honey
  • 1 teaspoon natural vanilla extract
  • 190g (3/4 cup) buttermilk
  • 120g (1/2 cup) extra virgin coconut oil, melted (see notes)
  • 250g (1 2/3 cups) self-raising flour
  • 1/4 teaspoon baking powder
  • 250g cream cheese, cubed, softened
  • 1 teaspoon natural vanilla extract
  • 1/2 – 1 tablespoon honey, to taste

Method

  1. Preheat oven to 180C or 160C fan-forced. Place paper cases into a 12 hole muffin pan.
  2. Combine eggs, honey, vanilla, buttermilk and melted coconut oil in a large bowl and whisk to combine. Sift flour into the mixture and mix in baking powder. Stir well.
  3. Evenly pour mixture into cases. Bake for 20-25mins. Check if cooked by inserting fork into muffin and if it comes out clean then remove muffins from oven. Leave to cool for 5 mins in pan. Transfer to a wire rack to continue cooling.
  4. Meanwhile, use an electric beater to beat cream cheese until smooth. Combine vanilla and honey into the cream cheese and combine until mixture is fluffy.
  5. Spread icing onto tops of cupcakes and serve at room temperature.
