Delicious peppermint and chocolate mousse

This dessert treat is super light and sweet and will have everyone running back for seconds. It’s so delicious and incredibly simple to whip up the night before a special event.

The best thing about mousse is it needs to be made in advance to allow it to cool and set. Therefore, when the stressful night comes around, your dessert is already prepared and ready to be served up without any extra effort. Top it off with a few squares of chocolate and you’ve got a delicious treat to spoil your guests with!

Ingredients

  • 2 x 100g blocks mint chocolate, chopped
  • 2/3 cup thickened cream
  • 2 eggs, separated
  • 2 tablespoons caster sugar
  • Peppermint leaves, to serve

Method

  1. In a heatproof, microwave-safe bowl, add chocolate. Microwave on medium (50%) for 2 to 3 minutes. Halfway through, stir mixture with a metal spoon. Make sure chocolate is smooth and melted before setting aside for 10 minutes to cool.
  2. Add cream to a bowl and beat with electric mixer for 2 to 3 minutes or until soft peaks form. Pour yolks and half the cream into cooled chocolate mixture. Stir well to combine. Fold in remaining cream carefully.
  3. In a separate bowl, use clean mixers to beat egg whites for 3 to 4 minutes or until soft peaks form. Add sugar. Beat until glossy. Gently fold in half the egg white mixture into the chocolate mixture. Fold in remaining mixture.
  4. Spoon into 4 x 1/2 cup-capacity glasses. Place in refrigerator to cool for 3 to 4 hours or until set. Garnish with peppermint leaves. Serve.
