Quiche has always been a popular recipe that everyone loves to enjoy and these special mini quiches make them even more delicious. They are ideal for entertaining and are super low maintenance to make. If you are missing any ingredients for the filling simply replace them with something similar that you already have lying around in the kitchen.
They are made up in under thirty minutes and take barely any cooking skills or experience to conquer. Don’t worry if you made too much you can always give them to the grandkids or pop them in the fridge for later. Yum!
Ingredient
- 4 sheets puff pastry, thawed
- 1 tsp oil
- 4 rashers bacon
- 1/2 onion, finely chopped
- 1 cup tasty cheese, grated
- 4 eggs
- 1/2 cup milk
Method
- Preheat oven to 18-C. Grease a 24-hole muffin tin. In a small frying pan over medium heat start to heat oil. Place bacon and onion into pan. Cook until bacon is cooked through and onion is translucent. Set aside to cool.
- Use a cookie cutter to cut out 24 rounds of the thawed pastry. Place each pastry in the holes. Mould gently to fit into the pan while making sure they do not break. Use a fork to make indents on outer edges of pastry.
- Evenly place a tablespoon full of the bacon mixture into each pastry. Top with a generous sprinkle of cheese.
- In a small bowl, whisk together eggs and milk until completely combined. Pour even amounts of egg mixture into each pastry hole. Fill until just below to the top, leaving enough room for quiche to rise.
- Bake for 12-15 minutes until pastry and filling is golden brown. Serve warm or cooled.
