Decadent New York baked cheesecake

The best dessert for special events!

A baked cheesecake will always be a crowd pleaser at parties or dinners. Not only is it so perfectly sweet and decadent but it’s also super easy to prepare. You can assemble this dessert in under ten minutes and pop it in the fridge to cool over night. This way, if you are preparing for a special event, the cake can be made the night before and still taste as fresh and creamy as ever!

Even though this recipe uses blueberries on top, you can add to this dish whatever berry or fruit comes to mind. Raspberries and strawberries are the more popular choices to compliment the sweet tastes. However, whatever you put on top won’t change how impressed your guests will be with this mouthwatering dessert!

Ingredients

  • 250g packet plain sweet biscuits
  • 125g butter, melted
  • 2 x 250g packets cream cheese, softened
  • 3/4 cup caster sugar
  • 3/4 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp finely grated lemon rind
  • 3 eggs
  • Frozen blueberries, thawed, to serve

Method

  1. Preheat oven to 160C. Grease a 6cm deep, 22cm round spring-form cake pan. In a processor, add biscuits. Pulse together until they resemble fine breadcrumbs. Add butter. Process. Spoon mixture out of processor and into prepared pan. Press breadcrumb mixture into pan and mould to shape the base and sides. Make sure base is smooth by using the base of a glass to press down any bumps. Place in refrigerator for 30 minutes.
  2. Meanwhile, add cream cheese, sugar, sour cream, vanilla and lemon rind into processor. Pulse together until smooth. Add eggs individually one by one. Process in between each until just combined. 
  3. Pour mixture into prepared pan. Bake for 50-60 minutes. Makes sure mixture has is just set and the centre wobbles slightly. Leave to cool in the oven with the door ajar for 2 hours. Refrigerate overnight. 
  4. Place blueberries on top of set cheesecake. Serve cool.
