Sticky barbecue honey chicken

There are many things you can do with chicken but what is really better than coating it in a delicious honey, barbecue sauce? Cooked in the oven and basted with pan juices, the chicken comes out so crispy and tasty you will want to devour the whole lot. This recipe can easily be made for a party as a snack throughout the night or paired with a fresh salad for a meal for the whole family to enjoy.

Ingredients

  • 1 tablespoon finely grated lemon rind
  • 2 tablespoons honey
  • 2 garlic cloves, crushed
  • 2 teaspoons dijon mustard
  • 1/4 cup barbecue sauce
  • 8 skinless chicken thigh cutlets

Method

  1. Preheat oven to 22o°C/200°C fan-forced. Line baking tray with baking paper and place a wire rack on top.
  2. Mix together lemon ring, honey, garlic, mustard and barbecue sauce in a large bowl. Add chicken and stir until coated evenly.
  3. Place chicken on wire rack and top with remaining marinade. Cook for 35 to 40 minutes, basting with an juices every 10 minutes.
  4. Serve by themselves as a snack or with a salad for a main meal.
