Scrumptious cheesy cauliflower muffins

Healthy, scrumptious cheesy cauliflower muffins.

You can’t go past a recipe that’s both healthy and delicious, and these cheesy cauliflower muffins tick both boxes, on top of also being super simple. 

Perfect for lunch, a savoury snack, or breakfast on the go, these muffins would be great to have on hand or in the freezer for when you don’t have time. Try them served with some relish and sour cream for something a bit more substantial. 

Ingredients

  • 350g cauliflower florets
  • 2 1/4 cups self-raising flour
  • Pinch ground nutmeg
  • 1 cup milk
  • 2 eggs
  • 1/2 cup olive oil
  • 1 1/4 cups grated cheddar
  • 2 green onions, finely sliced
  • 2 teaspoons ground smoked paprika

Method

1. Preheat oven to 200C and line a 12 hole muffin tin with muffin wrappers.

2. Use a food processor or blender to finely chop the cauliflower.

3. In a large bowl, mix together the flour and nutmeg. Whisk the milk, eggs and oil separately in a small bowl. Season and add to the flour mixture and stir with a wooden spoon until just combined. Add cauliflower, 1 cup cheese and onion and mix. Spoon mixture evenly between the muffin cases, then sprinkle with remaining cheese and paprika.

4. Bake for 25-30 minutes or until a skewer inserted in centre comes out clean. Allow to cool in tin for 10 minutes before transferring to a wire rack. Serve warm, and with sour cream and relish if desired.
