This is one of those amazing recipes that takes no time at all and will have you eating a wonderful savoury vegetable treat in no time at all.

2 cups zucchini, grated
1/2 of an onion, diced
1/4 cup Mozzarella cheese
1/4 cup freshly grated Parmesan cheese
1/2 cup breadcrumbs

1. Squeeze zucchini of excess water and pat dry
2. Saute onions in butter until translucent
3. Mix all ingredients together and put into prepared mini muffin pan, bake for 15-18 minutes on medium heat.
Try adding some grated carrot for added goodness or a bit of ham for a protein hit.
Serve with a side of aioli or drop of sour cream for a flavour hit, or fresh and warm out of the oven. Goes great with a salad for a light dinner or lunch as well.
