Pork is one of those meats that often needs a little boost in the flavour department and this recipe really delivers! Orange juice and marmalade come together to create the most amazing orange glaze that turns into a sticky and delicious addition to the meal. The flavours here work perfectly with a simple side dish of steamed veg, or you can twist it into something a little different and serve with rice and Asian greens instead. Either way, it’s one of the best pork dishes out there!
Ingredients
Method
1. Mix orange juice and marmalade together in a small bowl. Heat butter and vegetable oil in a large frying pan over medium heat. Season pork chops with salt and pepper. Add chops to the pan and cook, turning once, until just cooked through, 6 to 8 minutes total. Transfer chops to a platter and cover loosely with aluminum foil.
2. Pour off all but 3 tablespoons of drippings from the pan and add the orange juice mixture. Raise heat to medium-high and stir, scraping up the brown bits on the bottom of the pan, until the sauce is reduced and slightly syrupy, 6 to 8 minutes. Return pork chops to the pan, reduce the heat to medium, and cook, turning the pork chops a few times in the sauce.
3. Transfer the chops to serving dishes and drizzle with some of the sauce. Pour the remaining sauce into a bowl and serve alongside the chops.
