The easiest and best meatloaf

The absolute best weeknight meal.

This family favourite has been an all-time classic in the kitchen for years. Not only do most people love a good meatloaf, but this recipe simplifies the process so you can prepare it in just 20 minutes. Served with mashed potato, peas and gravy, you’ve got an easy yet hearty dinner. 

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 cups fresh breadcrumbs
  • 500g beef mince
  • 300g pork and veal mince
  • 1 egg, lightly beaten
  • 1 tablespoon wholegrain mustard
  • 2 teaspoons Worcestershire sauce
  • 3/4 cup tomato sauce
  • 2 tablespoons brown sugar
  • Mashed potato, to serve
  • Steamed peas, to serve
  • Gravy, to serve

Method

  1. Preheat oven to 200C. Greace a loaf pan. Heat oil in a frying pan over medium heat. Add onion and garlic. Cook and stir for 5 minutes until tender. Set aside to cool for 5 minutes.
  2. Place onions, breadcrumbs, minces, egg, mustard, Worcestershire sauce and 1/2 cup tomato sauce in a bowl. Mix with a wooden spoon to combine. Spoon into pan. Even out the top with the back of the spoon.
  3. In a small bowl, combine sugar and remaining sauce. Spread mixture over top of mince. Bake for 1 hour until browned. Drain juices. Set aside for 5 minutes. Serve with mashed potato, peas and gravy.
