Tender herb-stuffed roast pork

It’s a classic recipe that pleases even the fussiest of eaters and will definitely fill up a whole crowd. If you are looking to impress your guests then try this nostalgic dinner dish that is not only super simple to put together, but so deliciously tender and flavoursome. Pair it up with some roast veggies and a bit of gravy and serve it up to a big, hungry crowd!

Ingredients

  • Olive oil, for greasing
  • 1 tbsp chopped fresh sage
  • 1 tbsp chopped fresh thyme
  • 3 garlic cloves, crushed
  • 3 amaretti biscuits, crushed
  • 1.4kg boned and rolled loin of pork, skin scored
  • 3 tsp sea salt

Method

  1. Preheat oven to 240C fan-forced. Lightly grease a roasting tin. Mix sage, thyme, garlic and biscuits in a bowl. Mix well.
  2. Unroll pork and face meat side up. Spread herb mixture completely over meat side. Roll meat back up. Secure with string at 2cm intervals. Rub 3 teaspoons of salt into the skin, making sure it goes into the slits.
  3. Place skin side up on prepared tin. Roast for 20 minutes. Reduce temperature to 180C fan-forced. Roast for another 1 hour and 25 minutes to 1 hour and 30 minutes or until completely cooked through.
  4. Remove from oven. Cool uncovered for 15 minutes. Remove strings and carve slices. Serve hot.
